The group that worked on them cut them much much thinner than the recipe suggested (the recipe said 1 inch cubes and these were about 1 inch x 1.5 inch by .5 inch--or even less in some cases).  I'll spare you the math, but the result is a higher surface area to tofu ratio--we'll call that SATR--which means more floury. So instead of using stars or forks or some other proprietary thing like "froogs" as the rating metric, why not use a range of 0-8 bucks?  I'd love it if no dish at any restaurant cost more than $8, so I'm going to refer to something really fabulous as an 8 buck dish.
